When I was younger, there was a sunday lunch that everybody loved: meatloaf.
That very thin crust, hiding in its soft interior a oozy filling (hummm).
This recipe isn't an attempt to replicate this beloved dish.
It started out as a burguer recipe, but deciding to unleash my imagination, I ended up combining a variety of ingredients.
The result? A "loaf", not made out of meat, but with a meaty color nonetheless, from the beets (the "vampire vegetable" like I usually call them).
Sal q.b.
Pimenta q.b.
Sumo de um limão
Especiarias (eu usei cominhos e pimentão doce)
Sementes de sésamo
One cup of cooked lentils
One red onion
Two garlic cloves
One cup of rolled oats
One cooked beetroot
Half a cup of nuts (or any other nuts of your choice)
Fresh coriander
Salt
Pepper
Juice of a big lemon
Spices (I used cumin and paprika)
Sesame seeds
Very simple!
Just mix all of the ingredients in a food processor until you get a homogeneous paste.
Mold it with a shape of a loaf, cook it in the oven until golden brown and, last but not least, sprinkle it with some of the sesame seeds.
